I am coming back for more mix so I can have some to eat. I cut the house sections before baking. Then I cut them again after the cookie pieces have that ready-to-eat look. (Like most cookies the dough spreads) I put the house pieces back in the oven for a few minutes more so they get sturdy and lose most of their moisture. I enjoy eating the scraps after the first baking. Most places have the pre-cooked gingerbread. I have not tried it becuase this is too good. I think the ginger flavor is noticeable and not too strong and I like it that way.
